Ground Beef and Rice

A quick and easy, hearty and delicious, ground beef recipe pack with flavor from the deliciously seasoned ground beef, tender rice, delicious sauce and lots of cheese. The perfect dinner recipe that can be on the table in no time.

  • In a large skillet, add ground beef, onions, and all seasonings, and cook over medium-high heat until meat is no longer pink and onions are tender. Drain, if needed, and return to skillet.
  • Add corn, black beans, black olives, and diced green chilies to meat mixture. Stir.
  • Pour enchilada sauce, Rotel and beef broth into skillet. Stir to combine and bring to a boil over medium heat.
  • Add rice, stir, reduce heat to low. Cover and cook for 20-25 minutes or until rice is tender. Stir frequently.
  • Top with shredded cheese, stir and enjoy.
