Ground Beef Vegetable Soup

This delicious soup is hearty, filling, and easy to make, loaded with deliciously seasoned ground beef, tender potatoes, and mixed vegetables, and is a family favorite soup recipe.

  • In a large frying pan or skillet, cook ground beef, onions, and seasonings until no longer pin and onions are tender. Drain and return to the pan.
  • Add diced tomatoes, crushed tomatoes, vegetable broth, beef broth, and cubed potatoes. Stir and bring to boil. Reduce heat and cook until potatoes are tender.
  • Once potatoes are tender, add frozen vegetables.
  • Return to boil then reduce heat and simmer for 10 minutes.
  • Ladle soup into individual bowls, salt and pepper to taste, and enjoy.
