Spicy Salsa Verde Rice

Ingredients

  • 1 3/4 cup uncooked white rice
  • 3 Tbs butter
  • 3 heaping Tbsp onions, chopped small
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 10 oz can Rotel®
  • 1/4 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 1/4 tsp pepper
  • 1 Tbs diced jalapeños
  • 8 oz salsa verde, I used Trader Joe's®

Instructions

  1. In a large frying pan, melt butter over low flame.
  2. Add onions and saute for 3 minutes and then add garlic. Continue to saute for 2 more minutes.

  3. Pour rice into frying pan and cook until rice starts to brown, stirring often.
  4. Once rice starts to brown, pour chicken broth, Rotel®, salsa verde, cumin, cayenne pepper, black pepper and jalapeños.

  5. Stir, then cover and simmer, over low flame, for about 20 minutes or until rice is tender and liquid is absorbed.
