Mini Chicken Tostadas

These mini chicken tostadas are so flavorful and super easy to make. Made with diced chicken breasts, zesty seasonings, onions and pepper, and pepper jack cheese, all on fried, crispy mini corn tortillas.

  • In a large frying pan or skillet, heat oil over medium-high heat.
  • Once hot, fry tortillas in small batches (4-5) at a time until crispy.
  • Remove from oil once crispy and place on a paper towel lined plate. Set aside.
  • In a large pan, melt butter.
  • Add in chicken, onion, jalapeno, and seasonings. Stir well to mix together.
  • Cook until chicken is completely cooked through and veggies are tender.
  • Assemble tostadas by placing chicken on top of fried tortilla, top with cheese and any other additional toppings. Repeat with all fried tortillas.
