St. Patrick's Day Sugar Cookies

These deliciously soft and chewy St. Patrick's Day sugar cookies are easy to make, are festive, and are the perfect cookie recipe to celebrate St. Patrick's Day at parties, potlucks, or for a midday snack.

  • Preheat the oven to 350° and line a baking sheet with parchment paper.
  • In a large bowl, using an eclectic mixer, cream butter and sugar together until creamy, about 3 minutes.
  • Beat egg, vanilla and corn syrup into mixture until combined
  • In a medium bowl, whisk flour, baking soda, baking powder and salt together.
  • Add dry ingredients into wet ingredients and mix.
  • Stir mini M&M's and candy sprinkles into cookie dough.
  • Using a 1 ½ inch cookie scoop, place rounded cookie dough on the prepared baking sheet.
  • Gently press each cookie down and add a few mini M&M's to the tops of each cookie and candy sprinkles, if desired.
  • Bake in a preheated 350 degrees oven for 10-11 minutes.
  • Remove from the oven and let cookies sit on the baking sheet for a couple minutes then transfer to a wire rack to cool completely.
