Black Bean Tostadas

  • 2 cups black beans, cooked
  • 1-2 tomatoes, diced
  • 2 avocados, diced
  • ½ cup onion, chopped
  • 1 cup lettuce, chopped
  • ½ cup cilantro, chopped
  • ¼ cup jalapeños, finely chopped (optional)
  • Homemade salsa
  • 8-12 corn tortillas, baked
  1. Preheat oven to 400°
To Make the Tostadas
  1. Place beans in saucepan over medium heat, stirring often, until hot. Keep covered on stove until tortillas are almost done.
  2. Spoon tomatoes, avocados, onions, cilantro, lettuce, jalapeños into individual serving bowls.
  3. Fill a small bowl with salsa and set aside with the other bowls.
For the Tortillas
  1. Line a baking sheet(s) with parchment paper.
  2. Place corn tortillas on baking sheet and place in oven.
  3. Bake tortillas for 15-17 minutes, or until crispy.
  4. Remove from baking sheet and place on serving plate.
  5. Build your tostadas your way and enjoy!
