There’s nothing better than a cold, crispy veggie sandwich on a hot summer day! This crispy veggie sandwich is loaded with flavorful vegetables that are both healthy, and delicious! I’ve been on a sandwich kick over the past couple months and there is no reason to give my money to the local sandwich shop when I can custom make my own! Seriously, even before I was vegan, there was just something about having a good veggie sandwich!
My daughter and I recently went to this amazing bakery in Bishop, CA for some awesome bread. The bakery is called, “Erick Schat’s Bakkery.” We bought quite a few varieties of bread. This bakery is definitely a must when are up in the Mammoth Lakes area. We haven’t been to this area in quite some time, so it was great to just hang out with my daughter for the 4 hour drive, each way! Yep, we had a great time reminiscing about all the vacations we took in Mammoth over the years. If you are ever heading to Mammoth, make sure to stop by and treat yourself to all the different types of breads and goodies this bakery has to offer! AMAZINGLY delicious!!
I know you might think this is just another sandwich, but this sandwich is healthy, super good and very filling! I’ve eaten many different types of meat sandwiches before turning vegan, and I have to admit, a veggie sandwich has the most flavor of any sandwich that I have eaten in the past. It’s absolutely my favorite tasting sandwich E.V.E.R!!
My dear friend Candy gave me a great idea, and it was to add seaweed to this sandwich. What it does to the sandwich is add a salty flavor, and it’s super good! You can buy these at Costco®. Halie, my daughter, loves her seaweed! So pick up some seaweed the next time you head to the store, and give it a try on your next veggie sandwich!
This is a great, delicious, anytime sandwich. As you can see from these pics, this crispy veggie sandwich is a healthy alternative to the typical, everyday sandwich!
- Bread of your choice: Whole wheat (keeps it vegan)
- Vine ripe tomatoes
- Dill pickles, sliced thin
- Cucumbers, sliced thin
- Red onion, sliced thin
- Avocados, sliced
- Leafy green lettuce
- Just Mayo with Chipotle (it's vegan)
- Seaweed (bought from Costco)
- Salt and pepper, to taste
- Get a couple slices of bread.
- Put some vegan mayo with chipotle and mustard on bread.
- Layer with lettuce, tomato, cucumber, pickle, onion, and avocado.
- Top with a couple pieces of seaweed.
- Add salt and pepper to taste.
